In a small bowl, combine olive oil, smoked paprika, garlic powder, salt, and black pepper.

Rub the mixture evenly over both sides of the chicken breasts.

Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.

Grill chicken breasts for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C) and chicken is cooked through and has nice grill marks.

While chicken is grilling, lightly toast the split buns on the grill or in a toaster until golden brown.

In a small bowl, mix mayonnaise and Dijon mustard to create a spread.

To assemble the sandwiches: Spread the mayonnaise-Dijon mixture on both halves of each toasted bun.
